Blackeyed Pea and Cornbread

B. BLACKEYED PEAS COOKED FROM SCRATCH -
"Scratch" is defined as starting with dried, fresh, or frozen Blackeyed Peas. No
canned Blackeyed Peas are allowed. Blackeyed Peas mixes ("just add Blackeyed Peas in
premeasured spices or water) are NOT permitted.
C. NO FILLERS IN BLACKEYED PEAS - Beans,
macaroni, rice, hominy, or other similar ingredients are not permitted.
D. SANITATION All food, utensils,
service articles must be protected from contamination during storage, preparation, display
and service. Food contact surfaces must be clean and sanitized as necessary. No smoking is
allowed in or around the food preparation and cooking area. All food will be kept a
minimum of 6 inches above the ground. Animals and birds are prohibited in the food
preparation and cooking area. Cooks and contestants must thoroughly wash their hands with
soap and water: a. before starting food preparation, b. during cooking as often as
necessary to keep them clean, c. after smoking eating or drinking, and d. after using the toilet.
Cooks are to prepare and cook Blackeyed Peas in
as sanitary a manner as possible.
E. INSPECTION OF COOKING CONDITIONS - Cooking
conditions are subject to inspection by the judges. (Failure to comply is subject to
disqualification.)
F. COOKS MAY HAVE TO TASTE THEIR BLACKEYED PEAS
- At the discretion of the head judge, Blackeyed Peas cooks may be required to remove the
lids from their Blackeyed Peas containers and taste their Blackeyed Peas before turning in
for judging. (If a contestant refuses, his or her Blackeyed Peas will be disqualified.)
G. ONE ENTRÉE OF BLACKEYED PEAS PER COOK - Each
head cook is responsible for preparing one pot of Blackeyed Peas that he or she intends to
be judged. No more than one judging sample per judge can be taken from any one pot for the
contest. Each team can serve contest observers samples.
H. BLACKEYED PEAS TURN-IN - Blackeyed Peas will
be turned in at the place and time designated at the cooks' meeting or as otherwise
designated by the judge.
I. PYROTECHNICS / weapons - No Blackeyed Peas
contestant may discharge firearms or use any pyrotechnics or explosives at a Blackeyed
Peas cook-off. Contestants discharging firearms and/or using explosives or other
pyrotechnics will be disqualified from the Blackeyed Peas cook-off. The appropriate law
enforcement agencies will be contacted.
J. PENALTIES - Failure to comply with Blackeyed
Pea Cookoff contest rules will result in disqualification of an individual cook for the
cook-off. Decisions of the judge(s) are final. In case of disqualification, the judge(s)
the cook-off will immediately notify the head cook and give a reason for disqualification.
In the event disqualification of a cup of Blackeyed Peas occurs after judging has started,
it is not necessary that the cook be located or given an explanation for the
disqualification.
Cornbread
A. Cornbread cooked off site - All
cornbread must be cooked from scratch off site the day of the cookoff. All cornbread must
be brought to the cookoff totally prepared.
B. CORNBREAD COOKED FROM SCRATCH -

oven. No purchased cornbread is allowed. cornbread mixes ("just add water or milk
to cornbread mixes) are NOT permitted.
C. SANITATION All food, utensils,
